Roux /roo/ is the start of all good things.
Every October in Portland OR, Roux celebrates food, drink and culture featuring pop-up dinners, chef collabs, panels and brunch alongside a citywide guide. Founded in 2019, it redefines itself year over year with new IRL events, highlighting women across the entire city.
Over many late nights and countless ideas, founders Delia and Jenna were trying to determine what to call this passion project of theirs. Just like your favorite dish, the most memorable experiences start with a good base — equal parts women, food, drink and connection. Roux is the flour and butter base to all the best dishes. And just like that, Roux was born.

Roux came to life in 2019 by House of Commons owners, Delia Tethong and Jenna Winkler (probably over baked goods) after countless conversations of wishing for an event highlighting more of their favorite, underrepresented talent in food and beverage. With over two decades of combined experience in hospitality, events, retail, restaurants and production they decided to bring that vision to life.
